INITA, a portmanteau of Italy, Nippon (Japan) and Taiwan, crafts food that is underscored by Italian technique, jazzed up with Japanese twists and made from local ingredients. The tasting menu reflects the Japanese chef-owner’s career spanning 20 years. A gregarious extrovert and born showman, he presents his dishes theatrically and with a great sense of fun.
