This family-run restaurant, in business for over five decades, has a true passion for food and has moved with the times without losing its traditional values. Located just a few metres from León’s cathedral, known as the Pulchra Leonina, this restaurant is full of contrasts, ranging from the masonry on the façade, which is in keeping with its historic surroundings, to its surprising contemporary-style interior design, which features an unusual wood-panelled ceiling. Alongside his wife Yolanda Rojo (the daughter of the founder), chef Juanjo Losada creates what could be described as cutting-edge Leonese cuisine, as part of which his visually creative dishes are built around the best local and seasonal ingredients. The only option here is a single tasting menu (with a wine-pairing option) that flies the flag for the region’s small-scale local producers and changes throughout the year. We were particularly impressed by the striking “bollo minero”, with creamy bacon in the middle and caviar on the outside.
