MICHELIN Guide’s Point Of View

The owner-chef closed his restaurant in his hometown in Ehime to set up shop in Tokyo. The menu places emphasis on traditional technique and includes mochi rice steamed and topped with seasonal fish, and elegant hassun. He expresses the changing of the seasons with seafood and vegetables from Setouchi. A tea ceremony aficionado, he devotes himself to providing hospitality and welcomes customers with the chanoyu spirit of harmony, respect, purity and tranquillity.

Commitment to sustainable gastronomy
Initiatives
We work together with farmers in Ehime to reduce food loss. We use unutilised ingredients that are a by-product of the citrus fruit growing process. We make dishes and drinks from the mandarin oranges and ponkan oranges we purchase. We’re starting with little things we can do to create new value.
