MICHELIN Guide’s Point Of View

Thin-pulled soba and a wide selection of shuko are the draws here. The two standard types of soba are: ‘Hosogiri (thin-cut)’, a juwari soba with natural sweetness and an elegant aroma and flavour; and ‘Arabiki (coarse-ground)’, a soba that is ground together with the buckwheat chaff, lending the noodles a rich, rustic flavour. A generous selection of appetisers precedes the soba and includes tofu preserved in miso and chicken liver simmered in ginger.
