His unique signature style is shaped by authentic flavours, creative impulses and technical ingenuity, with a special emphasis on spiciness and vibrancy. For instance, the catfish comes in three intricate dishes, one of which features a fillet aged for eight weeks and marinated with miso and sourdough, accompanied by a frothy beurre blanc, parsnip purée and a sweet-and-sour vegetable chutney.
