Cappadocia’s cave-complex hospitality scene is here to stay, and foremost among your destinations should be the Exedra Hotel Cappadocia, whose craggy nooks and alcoves retain every bit of their fantastic, old-world appeal. Just off the main square of ancient, sleepy Ortahisar (“middle castle,” referencing the town’s defining feature, a towering sedimentary formation pockmarked with holes and hideaways), the House Hotel occupies a clutch of stone homes and grotto-like caves carved from the malleable earth.

Inside, architect Şekibe Aslan’s restorations are readily apparent against the timeless stone backdrop: public areas house painstakingly backlit objects d’art and antique chests amid a series of thickset Romanesque arches. The lobby doubles as a bar, with welcome islands of plush, designer furniture and patterned carpet at regular intervals. Nearby, Fresko Restaurant (three guesses on the wall decorations) serves classic Turkish dishes with a twist among original rock arches and an expansive terrace. Indeed, the authentic stone details — fireplaces, hewn staircases, shelving — are everywhere to be found, lending a surprisingly warm and human touch to the surroundings.

No guestroom is quite the same, though they all enjoy a singularly inspiring view of the unearthly terrain. There’s a fascinating contrast between the coarse austerity of the stone and the inviting, goose down bedding, underscored by refreshing floral arrangements and candle clusters. You won’t have to live entirely like a monk, however; modern comforts abound, from docking stations to LCD TVs to complimentary wi-fi and a well-equipped coffee and tea station. Bathrooms, in particular, amp the luxury up with Turkish marble surfaces, underfloor heating, rain showers, vessel sinks, and custom Lokum Istanbul amenities peeking out of polished copper basins. If that’s not enough, there’s always the full-service spa — or speak with a concierge to arrange the requisite hot air balloon ride, whirling dervish ceremony, or horseback river jaunt.
