Oliverea is just down the road from Big Indian, in the Catskills of New York State; it’s home to only a few hundred people, and doesn’t exactly loom large in the public imagination — but that’ll change now that it’s home to the third Eastwind hotel. Like its siblings, the Eastwind Hotel - Oliverea Valley is inspired by rural Scandinavian (or maybe Baltic) design; two of Eastwind’s three founders are from Germany and Lithuania, respectively.
Unlike the other Eastwinds, this one began as an empty lot; the buildings were purpose-built for hotel use, and the hotel’s 27 rooms are as stylish as anything in rural New York State, combining as they do a rustic unpretentiousness and a minimalist Nordic simplicity. The rooms in the lodge are furnished with vintage mid-century pieces, and the trademark triangular cabins range from tent-sized all the way up to 400-square-foot suites, the latter of which come with en-suite bathrooms.
Dandelion, the restaurant, is the work of Eastwind’s third founder, a veteran of the New York City restaurant scene. The cuisine is not just local and seasonal but conceptually tailored to the Catskills setting, with an emphasis on “hunter-gathering and conscious farming.”
