MICHELIN Guide Hong Kong and Macau proudly announces the return of the 16th edition of the MICHELIN Guide Ceremony Hong Kong & Macau, following its unprecedented success last year.

The MICHELIN Guide Ceremony will take place on Thursday 14 March in Macau, a vibrant hub of culinary culture and experiences. This prestigious culinary gathering will once again bring together the culinary elite, industry professionals, and food enthusiasts to celebrate the exceptional dining scene in this lively region.

Bib Gourmand Announcement
As anticipation builds for the upcoming MICHELIN Guide Ceremony, food enthusiasts and industry professionals can look forward to the release of the much-loved Bib Gourmand selection one week prior to the event. This distinguished list showcases restaurants that offer a delightful combination of "good quality, good value cooking."

The selection criteria for both Bib Gourmand and MICHELIN Stars strictly adhere to a global standard upheld by the esteemed team of anonymous MICHELIN inspectors. All establishments are chosen based on the same five key criteria that MICHELIN inspectors utilise all over the world: quality of the ingredients; mastery of cooking techniques; the harmony of the flavours; expression of the chef’s personality in the cuisine; and consistency of excellence over time and across the entire menu. Location, décor, service, and available facilities are not part of the selection criteria.

MICHELIN Guide Taiwan 2023

Chef Jimmy Lim Tyan Yaw's culinary journey began in his childhood, growing up in Singapore, where he assisted in his father's hawker stall. This humble stall offered beloved Singaporean dishes like curry fish head, chili crab, and clay pot tofu, unknowingly sowing the seeds of his culinary passion. In 2020, the year witnessed the arrival of the first Michelin guide in Taiwan, where JL STUDIO was bestowed with the prestigious 2 MICHELIN Stars. Fast forward to 2023, a year of monumental significance for Chef Jimmy Lim and his dedicated team. They achieved the highest accolade in the culinary world: the prestigious 3 MICHELIN Stars, as bestowed by the MICHELIN Guide. This historic achievement marked Chef Jimmy Lim as the first Singaporean Chef to attain this esteemed recognition. Additionally, JL STUDIO became the sole 3 MICHELIN Starred restaurant in the world dedicated to serving Singaporean Cuisine.

MICHELIN Guide Thailand 2024 

Supaksorn “Ice” Jongsiri, also known as Chef Ice, hails from Nakhon Si Thammarat in southern Thailand. He has a deep-rooted appreciation for the rich culinary culture of the south and draws inspiration from his beloved paternal grandmother, who was always the one cooking for the whole family. Spending his childhood during school breaks assisting his grandmother in the kitchen, Ice naturally developed a love for southern flavors and techniques. Before founding Sorn, Ice embarked on a two-year long journey to all 14 provinces of southern Thailand, immersing himself fully by learning cooking techniques from farmers, fishermen, foragers and long-standing local eateries. He learned ancient techniques, such as using a charcoal stove to prepare rice and grinding rice grains into powder with stone mortars. Ice’s exploration deepened his appreciation for the flavors of local ingredients, and he vowed to honor the authentic cooking techniques and local flavors at Sorn.

Chef Stefan Stiller

MICHELIN Guide Shanghai 2024

Originally from Celle, Germany, Stefan Stiller started his culinary career when he was 16. He worked in one -, two -, and three - MICHELIN Starred restaurants across his home country. Since moving to Shanghai with his family in 2004, Stefan has established a prominent presence in the city’s culinary scene, both as a chef, restauranteur, and as a mentor to aspiring cooks in China. He launched the Taian Table concept in April 2016 as a culmination of his longtime vision. Just five months after it opened, Taian Table Shanghai received its first MICHELIN Star, and retained its MICHELIN Star for three consecutive years before receiving the second MICHELIN Star in the MICHELIN Guide Shanghai 2020. Then, the restaurant has proudly retained its three MICHELIN Stars and MICHELIN Green star ratings for the third consecutive year since the MICHELIN Guide Shanghai 2022.

Chef Adam Wong

MICHELIN Guide Hong Kong Macau 2023

Adam Wong is the executive chef of Forum Restaurant, a three MICHELIN Starred fine dining Cantonese restaurant located in Causeway Bay. Adam is the apprentice of 'King of Abalone', Hong Kong's most reputable Master Chef Yeung Koon-yat, with his signature Ah Vat Abalone. Wong joined the team in 1992 and has worked in the Chinese cuisine industry for more than 30 years. Adam graduated from the master class of the Chinese Cuisine Art Institute and has received numerous professional qualifications including the founder president of the Chinese Culinary Institute Master Chef Chapter, chairman of World Master Chefs Association for Cantonese Cuisine, member of the Ordre Mondial des Gourmets Degustateurs, Le Corden Bleu alumni, member of the Commanderie des Cordons Bleus etc.

MICHELIN Guide Hong Kong Macau 2023 

Chef Julien began his culinary career in 1996, when he joined the finest MICHELIN Starred restaurant in Paris and worked with legendary Chef Joël Robuchon for more than 20 years. Mr. Robuchon introduced Chef Julien to the 3 MICHELIN Stars Le Meruice, where he sharpened his skills as Sous Chef. In 2012, Mr. Robuchon invited Chef Julien back to open L’Atelier de Joël Robuchon Etoile as Chef de Cuisine. The following year, Chef Julien was given yet another opportunity to work with Mr. Robuchon, only this time – in Asia. He moved to Hong Kong, where he joined the 3 MICHELIN Starred L’Atelier de Joel Robuchon. On the heels of his success in Hong Kong, Chef Julien moved next door to Macau, where he became Executive Chef of Robuchon au Dôme in 2015. Under his leadership, Robuchon au Dôme has consistently earned 3 MICHELIN Stars for 15 consecutive years.

René Frank is one of the world’s most renowned pastry chefs. His culinary skills and vision have repeatedly earned CODA 2 MICHELIN Stars. René Frank draws his culinary inspiration from all over the world. He tests the limits of what is possible and constantly strives to break new ground. He thinks progressively, experiments boldly, and creates desserts unlike anything seen before. His experiences abroad, as well as his time as head pastry chef at the 3 MICHELIN Starred restaurant “lavie,” have had a powerful influence on him. In 2016, he opened CODA, realizing his dream to open his own fine dining restaurant dedicated solely to desserts.
