The sight of local vegetables being delivered by electric vehicle is a neat reflection of the mindful philosophy that permeates this lively restaurant with its vintage-inspired aesthetic. In their impressive open kitchen, the young chefs demonstrate just how compelling plant-forward cooking can be today: ingredient-led, carefully considered and packed with flavour, with a clear love of cooking over an open fire. Confit and grilled celeriac is glazed with Dutch miso, its intensity reinforced by the umami nuances of wild garlic capers and a sweet-and-sour fruit coulis of dried strawberry. Grilled oyster mushrooms are paired with a bright pear compote and a plant-based beurre blanc. The dishes burst with flavour, combining creativity with intrigue. While you are here, it is well worth checking out Bar Bocht, which serves coffee and small bites prepared according to the same principles.
