Chef Dorus Floris and sommelier Lendl Mijnhijmer began their working relationship at the MICHELIN-starred Bougainville, and the synergy between them is palpable in every detail, from the impeccable service to the exquisite wine pairings and the lounge feel of this elegant, open-plan restaurant – the setting and the food are perfectly aligned. The chef expertly creates an interplay of international flavours and zesty nuances. Take, for example, the pickled sea bass tartare with a crisp nori leaf, drops of fermented blood orange and a wasabi mayonnaise, finished with a citrusy orange dressing. Showw is the result of two passionate creatives coming together.
