In a spacious glass-fronted kitchen visible from the elegant dining room in warm tones, the chef creates dishes that balance traditional Portuguese cookery—especially from the Algarve—with recipes of his own identity. The offering, crafted from the finest seasonal ingredients nature provides, comprises three tasting menus: Água (“Water”, celebrating fresh fish and seafood), Fogo (“Fire”, centred on exceptional meats) and Terra (“Earth”, the source of vegetables).
