"Vespasia goes to great lengths to implement sustainable practices. The restaurant’s ingredients are sourced from carefully selected local producers, as well as from its own farm which grows lentils, chickpeas, cicerchia beans, wheat and spelt (used for flour and bread products). It also has its own natural truffle fields, three solar panel farms in different locations around Norcia, and a laundry that works via reverse osmosis to re-use water."
