The season is emphasised more than anything, and the four seasons of Japan are expressed through the tempura. The set menu features seafood and vegetables. The shrimp is prepared in two ways: the first has a light batter, and the second is sprinkled with batter to provide two different textures. The chef also applies ingenuity to the coating and method of frying. The dishes served in between are also appealing.
