"It's fair to say that, when it comes to our cuisine, regionality is at the heart of our brand. But the fact that our set menus are always plant-forward and that we go entirely vegetarian in September also says a lot about our philosophy! Our producers are based nearby: We get cattle from the Almenland, lamb from the Weizer Schafbauern farmers' cooperative, there is a game reserve with deer in the village – all of which is great for us. Furthermore, the conservation of resources is a matter close to our hearts!"
