The owner-chef visits farmers and gathers vegetables to fire his culinary imagination. Consider the hassun: defying the standard practice of combining ingredients from both ocean and mountain, he serves only vegetables. In spring, sprouting buds are garnished with edible wild plants; in summer, chilled vegetables are cool to both eye and palate; in autumn, chestnuts and mushrooms are the stars of the crop; and in winter, root vegetables are cooked to express the warmth of the good earth.
