MICHELIN Guide’s Point Of View

Chef Shuzo Kishida works from la carte blanche, i.e. from scratch. Rather than specific dishes, a menu is prepared for each table. Pursuing the three themes of ingredient selection, cooking, and seasoning, he creates works that show constant evolution.Signature dishes include the goat milk Bavarian cream with a pinch of salt and a drizzle of olive oil, and the meringue ice cream.
