MICHELIN Guide’s Point Of View

Emphasising the season, the owner-chef adds unseen extra touches but never to the point of extravagance. For example, the firefly squid in spring is placed on mocha rice, steamed and then coated with green laver paste. In summer there’s hamo, with the bones painstakingly removed, carefully grilled to a fluffy texture. His spirit of hospitality, cultivated in Kyoto, is evident in the Kyo-ware and in how he sees you off at the end.
