MICHELIN Guide’s Point Of View

The chef takes a multiplicative approach to cooking, weaving together Japanese and Western. Drawing on his experience of both Japanese and French cooking, he uses katsuo dashi for some dishes and French-style stock for others. Wanting to satisfy not just the stomach but the mind, he goes all out to ensure good ingredient quality; seafood is from Suruga Bay, vegetables from contracted growers, and the pork and beef from producers nationwide.
