It’s easy enough to stay at home and wait for Burgundy’s most famous product to arrive on our shores, but any proper European wine tour would have to pass through the medieval walled city of Beaune. Not only is it a town of architectural distinction, it’s also home to seemingly no end of wine cellars, representing the many producers from the surrounding villages. And it’s also home to a splendid hotel, the Hostellerie Cèdre & Spa, a classic 19th-century townhouse right at the edge of the old town.

Its exterior and its public spaces retain all of their historical atmosphere, while its 40 expansive rooms and suites display a style that’s more contemporary, but still tailored to its setting. The comforts are high-end, including the Nuxe bath products, a preview of what’s on offer at the hotel’s spa. Wine tourism is probably first on the agenda, as well as a visit to the Hospices de Beaune, with its wine museum and market. All the same, it’s worth making time for the Hostellerie’s restaurant Clos du Cèdre, serving upscale local fare on the garden terrace, accompanied by more than 400 Burgundy wines.
