Contemporary Classic & Quiet
Sometimes it’s worth staying at a hotel for the food alone. Hostellerie du Chapeau’s recently renovated restaurant, William Frachot, received two stars in the 2013 Michelin Guide. With a menu that pays tribute to the products of Burgundy, it’s a great start for wine lovers using Dijon as a jumping-off point for the famous Route des Grands Crus. While modestly sized, the rooms are cheerful and match the restaurant’s modern style, with lots of light, bold-colored furniture, and contemporary art. A spa and wellness area, nestled in the building’s vaulted stone cellar, is also available, where guests can relax in a steaming hammam, sauna, or massage showers.
