MICHELIN Guide’s Point Of View

The theme here is ‘additive cooking’, with the chef creatively weaving French techniques into the Cantonese cuisine that he learned. He creates one-off flavours by marrying ingredients and giving variety to textures and temperatures. Good examples are the monaka wafer cake filled not with bean jam but foie gras, or the gyoza made using ice cream powder. Fresh, new presentations made in a modern space impart a feeling of new possibilities.
