MICHELIN Guide’s Point Of View
French cuisine with a healthy dollop of Japanese influence, by a chef well versed in Japanese cuisine. Soup of locally raised chicken uses chicken dashi stock with char-grilled chicken thigh meat, prepared with Japanese techniques and scented with vermouth for a French sensibility. ‘Jfree’ means ‘free’ as in ‘free expression’.
