MICHELIN Guide’s Point Of View

Customers are treated to creative dishes based on traditional Japanese cuisine and presented with a sense of fun by Chef Zaiyu Hasegawa. The ‘Dentucky’ chicken wings are like a snack between the main items and are stuffed with steamed mochi rice. The takiawase-style ‘Den Salad’ features vegetables prepared according to the ingredient, including simmering, boiling, and steeping. Messages of appreciation from people all over the world cover the walls and pillars.

The chef's commitment
Thanks to the support of producers, the vegetables we use are grown without pesticides or chemical fertilisers. Our speciality salad expresses our connection to farmers and is a fun way for diners to see what came out of the garden. We source fish without specifying the kind so as to reduce the burden on fishing grounds.
