On the ground floor, in a decor with assumed cool tones, Pure & V offers a healthy and balanced score, based on carefully sourced products, with particular emphasis on vegetables: roasted fennel, fermented sauce with white asparagus and fresh dill oil; quail cooked on its chest, smoked beurre blanc; chamomile bavarois and satsuma mandarin.
