Bib Gourmand: good quality, good value cooking
Dennis Vermeulen created Waers in his own image – anti-conformity incarnate. In this minimalist, Scandinavian-inspired restaurant, diners are welcomed with genuine warmth, and the chef focuses on showcasing the finest market-fresh seasonal ingredients. This is not overly fussy cooking; expect instead balanced, inventive dishes that capture the current zeitgeist. Take, for example, his refreshing sour cream panna cotta paired with sea buckthorn ice cream, apple cream, sorrel gel and basil oil. The set menu is excellent, and for a more comprehensive experience, there is also the tasting menu. Exceptional value for money – including on the wine list!
