MICHELIN Guide’s Point Of View

This restaurant has been in the family since it was founded in 1929. Today, third-generation owner-chef Koji Kimura maintains the traditional taste. Based on his theory that the bigger the fugu the tastier, he uses wild-caught fugu weighing at least 6 kg. Marinating the fugu skin in ponzu sauce was conceived of by the founder. The chiri nabe with shirako in the dashi is a dish that was created for staff, and combines shirako left over at the end of the fugu season with miso soup.
