Housed in a former Greek theatre in the picturesque old town of Urla, this trendy establishment combines an industrial aesthetic with an inviting atmosphere. The restaurant's freshly pressed olive oil is a highlight of its modern cuisine, which is full of personality. Acidity and spice bring the dishes to life. Start, for example, with pickled sea bream with green apple and a splash of lime juice, then follow that up with melt-in-your-mouth charcoal-roasted lamb cutlets with parsley, olive oil and onion – straightforward and delicious. "We are a circular, sustainable local brand inspired by Urla's largest sustainable agriculture oasis and biodiversity guardian, Hiç Olive Forest. Our forest absorbs 19.5 tons of carbon annually through our 60,000 olive trees and wild edible vegetation, which we bring to Hiç Lokanta. Our restaurant produces 0.7 tonnes of food waste annually. Our forest, where we produce agricultural production with 100% green energy, is a national park that acts as a lung for the entire region."
