MICHELIN Guide’s Point Of View
In a brand new, cosy, modern restaurant in a peaceful street, Martino Ruggieri, Yannick Alléno’s former brilliant right-hand man at the Pavillon Ledoyen, also Bocuse d’Or of Italy 2019, has entitled his establishment House Ruggieri to better welcome us to his home. He proposes two menus and a particularly enticing à la carte offering. It is even possible to order a dish, an ingredient or a recipe when you book your table. Averse to showy, demonstrative displays, his delicate, subtle cooking gets right down to business: outstanding ingredients at the service of superlative flavours, harmonious, sometimes disconcerting assemblies (such as a dish of spinach, oysters and caviar) and flavourful recipes, often enhanced by jus (drizzled over a rib of beef, razor clams and smoked eel, for example) and mind-blowing sauces that are thoughtfully left on the table…
