The López sisters, with Irene in the kitchen and Eva in charge of front of house and wine, surprised us in this centrally located aristocratic property, the former family rooms of which been transformed into comfortable, classic-style dining rooms. The chef, who previously studied chemical engineering, has taken advantage of her knowledge in this field by applying the principles of molecular reactions to her recipes, which are unsurprisingly based around local ingredients. On the à la carte, which is complemented by two tasting menus (Origen and Inspiración), you’ll find unmissable dishes such as the impressive grilled Iberian pork shoulder with a pistachio pesto and shitake and onion sauté (prior to being slow cooked, the meat is marinated in soy and mirin for 24hours). As you would expect, the wine list is heavily focused towards wines from Jumilla.
