Farm-to-table
This U-shaped property is set in a quiet and secluded location in the Königsdorf mountains, surrounded by meadows, forests and greenery – the perfect backdrop for Cathrin Maric and Philipp Kroboth to live out their concept of sustainability and self-sufficiency. On their organic farm, they grow vegetables, fruit and herbs, keep goats and chickens, and harvest honey from their own bees. Everything else is sourced from like-minded producers in the immediate vicinity. Diners are served a seasonal surprise menu featuring flavoursome, ingredient-led dishes. The proprietor himself recommends the wines and gladly shares insights into his organic ethos. Housed in the former stables of the farm, the space is attractive: modern design, wood and stone, and floor-to-ceiling windows with an unobstructed view of the outside. Up to 16 people can be seated at four tables in front of the open kitchen. This creates a personal and intimate atmosphere, which is enhanced by your two hosts' warm and natural presence – it feels a bit like dining with friends. The owner also runs her veterinary practice next to the restaurant.
"Sustainability isn't merely a buzzword for us; it's our way of life! Our entire operation is based on a circular economy. We produce our own organic honey and raise our own Pinzgau goats and Sulmtaler chickens. Furthermore, we source premium farmed fish in the neighbourhood, and our restaurant is surrounded by lush meadows, forests and plenty of greenery."
