There is much more to making soba than meets the eye, and just one step in the process can change everything. The owner-chef prefers the buckwheat variety from Maruoka, Fukui, with which he makes thin juwari soba. The basic offerings are mori soba, which emphasises the feel of the noodles going down, and fragrant inaka soba. The coolness of the pungent daikon, myoga and kinome create a sense of oneness in the myoga oroshi soba. Made with kombu, the dipping sauce brings out the flavour. The thick sobayu with plenty of flour is another example of how things are done here.
