Eastwind Hotel - Oliverea Valley
Unlike the other Eastwinds, this one began as an empty lot; the buildings were purpose-built for hotel use, and the hotel’s 27 rooms are as stylish as anything in rural New York State, combining as they do a rustic unpretentiousness and a minimalist Nordic simplicity. The rooms in the lodge are furnished with vintage mid-century pieces, and the trademark triangular cabins range from tent-sized all the way up to 400-square-foot suites, the latter of which come with en-suite bathrooms.
Dandelion, the restaurant, is the work of Eastwind’s third founder, a veteran of the New York City restaurant scene. The cuisine is not just local and seasonal but conceptually tailored to the Catskills setting, with an emphasis on “hunter-gathering and conscious farming.”
