However, the lines wrapping around this upscale, longstanding gem are a sure sign you’ve chosen well. Make sure to make a reservation, or try to sneak in for lunch or an early dinner to avoid a wait.
Its name reflects how the menu is organized—offering meats in quarter-pound portions, thereby allowing diners to sample an ample array of marinated cuts. Come hungry or bring a friend, as solo diners are required to order at least a couple orders of meats. Kick things off with the sizzling pork skin, loaded with rich collagen and excellent seasoning. Four strips of beautifully marbled boneless short rib are then presented on a platter, judiciously seasoned and cooked to pink perfection.
