Instead of typical Shandong classics, this native chef from the province champions a seafood-heavy menu with critters that he sources from the Weihai port daily. Braised sea cucumber with scallion takes five days to prepare and shouldn’t be missed. Also try the giant mixed-grain pancake, a staple from the Mount Yimeng area, served with six condiments on the side. Round it out with artisan yoghurt freshly made daily from donkey’s milk.
