The restaurant faces both the indoor swimming pool and the sea, which is perfect for sunset portraits in the evenings. The menu by David Boyer (Meilleur Ouvrier de France) exalts the region’s first-rate produce. The crab with roasted rice and glazed lovage, or the two-course Racan pigeon with a raspberry reduction, bear witness to the chef’s meticulous handiwork.
