A former winegrower’s mansion, tucked between the Languedoc’s Picpoul vineyards and the Thau Lagoon, this estate now belongs to the well-known Tarbouriech oyster-farming family — in its present incarnation as a small luxury hotel, the Domaine Tarbouriech, perhaps unsurprisingly, is focused more on seafood than on grapes. (The spa incorporates oysters in its treatments in ways that defy a brief hotel description.) Lovely, lively rooms are divided between the old castle and its outbuildings, and the two restaurants on site are joined by a lagoon-side oyster bar, all of which feature the Tarbouriech family’s specialty.
