The atmosphere is simple and convivial, with the authentic feel of a typical Tuscan trattoria. It is from this tradition that the cooking takes its cue, offering a number of regional classics: from the selection of cured meats to ribollita, from roast pigeon served with fettunta and zolfini beans to cantucci with Vin Santo. There are also occasional seafood dishes, such as cuttlefish and artichoke stew. These are generous, full-flavoured dishes, faithful to a style of cooking that expresses Tuscan identity to the full, sometimes refreshed through more contemporary interpretations, yet always recognisable and reassuring.
