The restaurant seems to be almost hidden and camouflaged among the beach establishments that crowd the coast of Senigallia: one would never expect to find a 3-Michelin-starred restaurant tucked away between beach umbrellas and the waves that lap the shore. The strength and originality of this cuisine lies precisely in its consistency in offering only the very best, starting with locally-sourced ingredients, with the courage to draw on and engage with the best-known and most familiar gastronomic traditions, those that have made this coast so popular, while giving them a creative and personal interpretation. The restaurant, which has been in business since 1990, has put together a series of classics that form the backbone of the menu, such as smoked spaghetti, clams and roasted date tomatoes, Marchigiana-style wood pigeon and the Senigallia-Brest dessert. Those who prefer the chef's newest creations can choose the Lab tasting menu and, last but by no means least, fans of game can opt for the hunting menu.
