The small fine dining establishment of Les Montagnards Hotel commands a jaw-dropping view over the Moléson and the Château de Gruyères. Diners enjoy modern cuisine by Kaiichi Arimoto, a Swiss-trained chef who boasts a stint with Peter Knogl in Basel’s three-star Cheval Blanc. Arimoto’s subtle, expressive score never fails to deliver, courtesy of premium ingredients, spot-on technique, a focus on flavour and an aversion to gimmicks.
