It’s also no stranger to food lovers in the know who flock here for the river fish dishes. Plump swamp eels from inland rivers are poached in a flavourful broth loaded with spices and herbs. When served at the table, the eels are drizzled with sizzling hot oil, their flesh being tender and juicy, but with a crispy chew.
