Devoted to pleasure! First-rate, often local produce: smoked trout from the Moulin des Couvent or Touraine asparagus. Ingredients with crisp, legible flavours, such as rack of roast lamb, cocoa flavouring, roast fennel, potatoes and mushrooms.
