The picturesque thousand-year-old town of Lingualossa stands at the foot of the northern slope of Mount Etna, and within one of its most distinctive 18th-century buildings is Shalai Resort, a lovely little gem of a boutique hotel that mixes Liberty-style ornament with crisp, contemporary design furniture and décor. As a lodging it’s more than worthy of note on its own terms, with a chic little spa and close proximity to the volcano. But its most salient attribute might just be its restaurant, where the local-born chef Giovanni Santoro earned a Michelin star in 2015.
