The rustic yet delicate cuisine of Wakuden can be sampled at the counter here. The chefs banter as they work, letting diners appreciate the energy of the kitchen. The head chef travels regularly to where his ingredients come from to maintain his knowledge of them. In spring he goes to Tsukahara, Kyoto Prefecture, to personally select bamboo shoots. He char-grills these unpeeled or adds them to takikomi-gohan. The respect for their ingredients shines through in the honest flavours of the dishes.

"We engage in organic rice cultivation in Kyotango, which is where we were founded. We spread crab shells supplied by a ryotei over the paddy fields, thereby returning them to the earth as nutrients. The staff help out at rice planting and harvest times, with the harvested rice going to each of the restaurants. We engage in tree planting for forest regeneration, creating the Wakuden no Mori forest."
