MICHELIN Guide’s Point Of View
One Star: High quality cooking
Kyoto native Motoi Maeda expresses the city’s milieu and traditions through French cuisine, creating a uniquely Japanese identity for his restaurant. For example, in February, he serves an appetizer of pilchard, decorated with holly And, uniquely, his foie gras is marinated in salted koji (malted rice). Maeda believes in constantly evolving, so changes the menu year by year. The wines from around the globe show his ambition to create an eatery that takes its place in the world.
