The counter serves as Masahiro Takimoto's own table. The chef showcases ingredients to be cooked, which he explains while regaling guests with stories from his culinary pursuits. The ‘Egg Chaud-froid’ carries memories of Paris and was passed on to Takimoto by Alain Passard, the chef lauded as the ‘magician of the stove’. Says Takimoto, "I want to be a link in the chain between French cuisine's history and its future."
