The spirit of chakaiseki serves as the foundation for conveying the Japanese seasons and culture through the presentations and serving dishes. For example, in June, Minazuki tofu is served on a dish of ice, and a cogon grass ring decorates the hassun as a wish for sound health. With the first snow of the year, false Solomon’s seal and a miniature snow fence are used to depict a winter scene. Water from a well on the premises is an essential part of the dishes prepared here. Handmade confectionery and usucha are served at the end, as in the traditional tea ceremony.
