Koke means ‘moss’ in Japanese, and, true to its name, the restaurant has a moss garden. It can also stand for ‘Kobe, Okinawa, Kyoto, Español’— to all to which chef Yusaku Nakamura has ties. Spanish cuisine forms the base, but with the use of French culinary techniques. A cornerstone of his cooking is the water from the well in the courtyard and, depending on the ingredients, he will cook over a firewood or charcoal fire, making him a true ‘fire and water chef’.
