A 19th-century manor house surrounded by forests and parklands, as well as an 18-hole golf course, the Domaine d’Auriac is the very picture of French country-house elegance. Its most unique feature may be its immediate location, on the site of the Carsac Oppidum, a long-abandoned ancient fortification barely a mile outside of Carcassonne’s walls. The rooms and the outlying houses are a mix of old-world and new, and the restaurants are prestigious indeed: the Bistrot d’Auriac, serving classics of the local cuisine, and the venerable gastronomic restaurant Bernard Rigaudis, helmed by chef Philippe Deschamps.
