Japan’s volcanic Oki Islands are a natural treasure, largely uninhabited and prized for their unique geology, geography, and ecosystems. Entô is situated in a way that makes the most of the landscape and seascape — set at the edge of the town of Ama, right at the opening to the bay, it’s provided with a front-row view of the Sea of Japan. Its 36 rooms are spread across two buildings, and are designed in a modernist, minimalist style that’s intended to disappear into the landscape. The restaurant, as one might expect, is defined by an emphasis on painstakingly sourced local ingredients.
