"Local produce, in season, treated with respect from farm to table and at a fair price is the philosophy at La Bòria. Almost all the ingredients are grown or raised in the Ardèche, the sourdough bread is made on site, as is the charcuterie. The building produces its own electricity by solar panels, rainwater is collected and local materials have been used for the construction (the roof structure is made of Ardèche chestnut), the furniture and the tableware."
